1 heaping cup peeled and chopped honey crisp apple (about 1 large apple)
1 tbsp light brown sugar
1/2 tsp ground cinnamon
[H5] Caramel Frosting
1/4 cup pure maple syrup
2 tbsp Natural SunButter
2 tbsp coconut cream *the thick cream from a can of coconut milk
1/2 cup unsalted vegan butter, room temp
2 cups powdered sugar
1/2 tsp vanilla extract
Pinch of kosher salt
[H5] Apple Blondies
1/2 cup Natural SunButter
1/4 cup unsweetened apple sauce
3/4 cup light brown sugar, packed
1 large egg + 1 egg yolk
2 tsp vanilla extract
1 cup oat flour, certified gluten free
3/4 cup quick oats, certified gluten free
1 tsp ground cinnamon
1/2 tsp kosher salt

[H4] Directions

Combine the ingredients to make the Cinnamon Apples in a saucepan and place over medium heat.
Stir and cook for about 5 minutes, or until fragrant and the apples start to become tender.
Transfer the apples to a bowl and reserve the saucepan for the caramel.
In that same saucepan (it’s ok if there are some cinnamon sugar bits in the pot), add the maple syrup, SunButter, and coconut cream.
Place over medium heat and whisk until everything is melted together.
Continue to whisk occasionally and allow the mixture to bubble. Once bubbling, the caramel should start to thicken.
Remove the caramel once it coats the back of a spoon. Pour it into a heat safe dish and transfer the caramel to the refrigerator to chill while we make the blondies.
Preheat the oven to 350F and grease and line an 8×8 baking sheet with parchment paper. Allow the paper to reach over the sides for easy removal.
In a mixing bowl, stir together the SunButter, apple sauce, and brown sugar.
Once combined, stir in the eggs and vanilla.
Toss in the oat flour, oats, cinnamon, and salt and stir to combine. Then fold in the cinnamon apples.
Transfer to the baking pan and spread the batter evenly. Bake for 20-25 minutes or until the center is firm to the touch.
Allow the bars to cool completely before making the frosting. They can be cooled slowly at room temp or sped up in the refrigerator.
Add the room temperature butter and 1 cup of powdered sugar to a mixing bowl. The butter should be soft enough to mix by hand, but an electric mixer can also be used.
Once smooth, mix in the additional cup of powdered sugar followed by the vanilla and salt.
By this time, the caramel should be completely chilled. Spoon half of the caramel into the frosting and mix until smooth.
Spread the frosting on top of the blondies and then drizzle with the excess caramel. Swirl the caramel into the frosting and top with a few pinches of cinnamon (optional).
Now slice and enjoy!

1 cup (100g) graham cracker crumbs
1 1/2 cups (195g) all purpose flour
1/2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter, room temp
1/2 cup (100g) light brown sugar, packed
1/3 cup (65g) granulated sugar
1 large egg, room temp
2 tsp vanilla extract
1 cup (280g) chocolate SunButter
4 oz marshmallow fluff (a little more than half of a 7 oz jar)
1/3 cup chocolate chips (optional)

[H4] Directions

Preheat the oven to 350F and grease and line a square 8×8 baking pan with parchment paper. Allow the paper to hang over the sides for easy removal.
In a medium bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt.
In a large bowl using a hand or stand mixer with the paddle attachment, mix together the butter and sugars on medium-high speed until light and fluffy (about 2 minutes).
Next, mix in the egg and vanilla.
Once combined, add in the dry ingredients and mix to form the dough.
Press half of the dough into the bottom of the baking dish.
Spread an even layer of the chocolate SunButter on top.
Dollop spoonfuls of the marshmallow fluff on top and very gently spread it as even as possible. Careful not to mix the marshmallow and chocolate together.
Crumble the remaining graham cracker dough on top and then sprinkle with chocolate chips.
Bake for 25-30 minutes or until the edges are golden brown and the center looks barely underdone.
Allow the bars to cool at room temperature for about an hour. They’re best served when they’re still a bit warm.

Chai Spice mix
1 tbsp cinnamon
2 tsp ginger
2 tsp cardamom
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp allspice
Cupcake Batter
1/3 cup(105g) maple syrup
1/3 cup(80g) coconut sugar
3/4 cup(180g) almond milk
1/2 cup(125g) Chocolate SunButter
1 tsp vanilla extract
1 cup(140g) cassava flour
3 tbsp(23g) coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tbsp chai spice mix (above)
Frosting: homemade or store-bought vanilla frosting + 2 tsps chai spice mx

[H4] Directions

Mix together the chai spices. Set aside.
In a mixing bowl, combine maple syrup, coconut sugar, almond milk, Chocolate SunButter, and vanilla. Microwave 30 seconds to melt the SunButter slightly, then whisk until smooth.
Add flours, baking powder, baking soda, salt, and spices. Mix until combined and smooth.
Scoop into a cupcake pan lined with paper liners, filling each 3/4 of the way.
Bake 22-25 minutes at 350°F.
Cool 10 minutes in the pan, then move to a cooling rack to cool completely before frosting.
Stir spices into your prepared frosting, pipe or spread onto cooled cupcakes, swirl the frosting with more Chocolate SunButter.
Enjoy! Leftovers can keep in the fridge for 1-2 days frosted, but unfrosted cupcakes can be stored in the fridge for 3-4 days if well sealed.
